Roasted Red Potato and Cauliflower Mashers
This delicious and nutritious alternative to the traditional Thanksgiving side dish will have your guest wondering how you created so much flavor without the use of butter and other high fat ingredients. Roasting the ingredients before pureeing brings out a dynamic and layered taste!
1 head cauliflower, chopped
6 small red potatoes diced
1 large shallot, sliced
4 cloves garlic, peeled and halved
2-3 Tbs grapeseed oil or olive oil
3 cups vegetable stock, plus 1/4c vegetable stock
1 tsp salt
1 tsp black pepper
1/2 tsp white pepper
Heat oven to 450 degrees. Toss chopped cauliflower, potatoes, shallot and garlic with oil, 1/4 cup vegetable stock, salt and black pepper. Roast on baking sheet in single layer for 45 minutes. Toss vegetables once during cooking. Once roasted, place 1 1/2c stock in bottom of food processor bowl then the vegetables. Begin to puree, adding the rest of the stock and white pepper until desired consistency is reached.
Serve warm. 6 servings

Sounds great - I believe the red potato you speak of is what we know as sweet potato in the UK.

Plenty of vegetables in any dish should be a healthy meal as they provide great quantities of antioxidants and fiber. Very needed for clear and healthy skin.
