Live Healthy Recipe: Power Packed Pancakes

Power Packed Pancakes

Power Packed Pancakes: These high fiber, high protein pancakes will be a hit with adults and kids. Make extra, as they reheat well for a 'grab and go' breakfast or mid-day snack

Ingredients  2 cups cooked steel cut oatmeal

8 egg whites
2 cups water
1 t cinnamon
4 scoops vanilla protein powder (rice, whey, soy)

Instructions
Spray nonstick pan with cooking spray and heat to medium high. Combine all ingredients and drop 2 tablespoon scoops onto heated pan. Cook 3 minutes on one side, then flip until done.
Top with sliced fruit, yogurt, preserves or pure maple syrup.
